Based on recipes from Piedmonte using cows milk. A young soft fresh white cheese from Cremalat with slight sweet flavour with creamy texture. Served fresh ,a versatile texture, of cross between mozzarella and soft feta. If allowed matures into a strong pungent runny cheese.
